Turkey Zucchini Meatballs

Turkey Zucchini Meatballs are loaded with sparkling zucchini, so certainly no dry meatballs here! Loaded with flavor, smooth to make and top for you!

Those Turkey Zucchini Meatballs are an excellent manner to deplete the zucchini out of your garden, but even when you have to go out and buy a pair, these meatballs are completely worth it.

Turkey Zucchini Meatballs

I used a cup of shredded zucchini, ricotta cheese and most effective a little bit of bread crumbs to hold them truly juicy and not dry the way a turkey meatball can on occasion be. I didn’t think they had been going to maintain together with best 2 Tablespoons of bread crumbs but the wife assured me that they’d be pleasant.

I fried mine, then baked them for approximately 10 mins just to make sure they had been cooked all the way via. Serve these Turkey-Zucchini Meatballs with your favorite pasta or all on their very own.

Turkey Zucchini Meatballs

INGREDIENTS:

  • 2 lb. ground turkey, 93% lean (not extra lean)
  • 1/4 cup bread crumbs
  • 2 cups grated zucchini, squeezed dry with paper towels
  • 1/2 cup part-skim ricotta cheese
  • 2 teaspoons salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 eggs, beaten
  • 1 24 oz. jar marinara sauce

INSTRUCTIONS:

  1. Preheat the oven to four hundred degrees.
  2. Mix all the substances (besides for the sauce) in a bowl and mix nicely to mix.
  3. Portion out into balls with a #20 ice cream scoop, you’ll get about 28 meatballs.
  4. Location the meatballs on a baking sheet sprayed with cooking spray and bake for 20-25 mins until the meatballs are not pink interior.
  5. Add the meatballs along with a jar of marinara sauce to a huge skillet and heat till warmed via, about 15 minuets.
